
Summer is absolutely flying by, but with the temps being so high, it feel like it might be summer forever. There are plenty of summer activities left on my to-do list: camping, drive-in movies, picnic. I don't know if you've heard yet, but Bailey's has a new liqueur, Baileys Almande. Baileys Almande is daiy-free and gluten-free, made with almond milk and vanilla and is available in select markets.
This Almande Creamsicle recipe created by mixologist Amanda Olig is for a summer, frozen treat. We all love a good orange creamsicle, but this steps it up with fresh strawberries and coconut water.
If you prefer your Almande Creamsicle on the rocks, you can pulse the strawberries in a food processor or blender solo, then mix with the other ingredients in a shaker. If you don't have coconut water on hand, you can sub with an extra ounce of OJ. The recipe is pretty flexible, so get creative and have fun!
I'm going to enjoy my frozen cocktail in a tall glass with a straw lounging in my backyard while Xavier and I cook out some turkey burgers this week on the grill. See, summer isn't over yet!

Baileys Almande Creamsicle Frozen Cocktail Recipe
Ingredients
- 2 oz Baileys Almande
- 1 oz Vita Coco
- 1 oz Orange Juice
- ½ oz Fresh Squeezed Lemon Juice
- 4 Strawberries
- 4 dashes Angostura Bitters
- 1 cup Ice
- Lemon Peel for Garnish
Instructions
- Combine Baileys Almande, Vita Coco, orange juice, fresh squeezed lemon juice, strawberries, Angostura bitters, and ice into a blender. Blend until smooth.
- Pour contents into a chilled highball glass.
- Garnish with lemon peel.
Currently, Bailey's Almande is only available in Colorado, California and Texas. Check Bailey's store locator to find it near you, but note that it doesn't seem to be working for Denver, so contact them if you need to find a retailer.
