¾cupdried cranberries
¾cupchopped roasted pecans
½cupchopped celeryabout 2-3 stalks
½cupchopped green onionabout 2-3 stalks
fresh chopped parsleyoptional, to garnish
Instructions
In a large mixing bowl, whisk the mayonnaise, white wine vinegar, dijon mustard, honey, salt, and pepper until smooth.
Add in the shredded chicken, cranberries, pecans, celery, and green onion. Stir until well combined, and all ingredients are evenly coated with the dressing.
Cover and allow to rest in the refrigerator for 30 minutes.
Garnish with fresh parsley (optional) and serve.
Notes
Storage: Store in the refrigerator in an airtight container for up to 3-5 days. Serve cold, heating isn’t recommended. Freezing is not recommended.
