These Jiffy jalapeño cornbread muffins start with a box of corn muffin mix and come together fast with a few pantry staples. I’m talking sharp cheddar, pickled jalapeños, and sweet corn, all baked into golden, sweet and spicy muffins that taste like you put in way more effort than you did.

They’re ready in less than 30 minutes, making them a perfect side dish for classic chili or soup. I also love serving this alongside BBQ chicken thighs.
You get a fluffy center, crispy edges, and just the right balance of sweet, cheesy, and spicy. Plus, no need to pull out fresh jalapeños unless you want to top them with a slice or two for looks.

Shortcut Notes
- Jiffy cornbread mix: Using boxed cornbread mix keeps this recipe pantry-friendly and saves a lot of time.
- No fresh jalapeños required: Diced pickled jalapeños bring the heat.
- 30 minutes or less: Ready in about 30 minutes from start to finish.
Ingredient Breakdown

- Jiffy corn muffin mix: This classic boxed mix combines flour, cornmeal, baking powder, sugar, and lard. Use regular Jiffy or honey butter.
- Egg: Helps bind the muffins and gives them structure.
- Whole milk: Adds moisture.
- Vegetable oil: Keeps the muffins soft and helps them bake up moist.
- Diced pickled jalapeños: These add heat without requiring fresh chopping or handling. You can find them in the grocery store next to jarred pickles.
- Sharp cheddar cheese: Shredded cheddar cheese adds a little toasty cheesy flavor.
- Whole corn kernels: Adds a pop of sweetness. Canned (drained) or thawed frozen corn both work well.

Instructions
Preheat oven to 400°F (200°C). Generously grease 6 muffin cups with butter or nonstick spray to prevent sticking.

In a medium mixing bowl, stir all of the ingredients together. Allow the batter to rest for 4 minutes (this allows the baking mix to hydrate and helps the muffins bake taller).

Divide the batter evenly among the 6 muffin cups.

Bake for 15–20 minutes, or until golden and a toothpick inserted in the center comes out clean.

Cool in the pan for 5–10 minutes, then transfer to a wire rack and serve warm.

Substitutions
- Milk: I always recommend whole because of the fat content (more moisture), but any milk will do.
- Vegetable oil: Melted butter or canola oil work too. You can also omit (though it will be less moist).
- Pickled jalapeños: You can use fresh jalapeños if preferred or even canned green chiles.

Equipment
All you need is a medium mixing bowl, a muffin baking pan, and a wire rack. I like to use a silicone spatula to mix the batter, but I've also used a fork in a pinch. I also like to use an ice cream scoop to transfer the batter from the bowl to the pan.
Behind the Recipe
This is one of those sides I come back to anytime I’m serving chili or BBQ. Jiffy is always stocked in my pantry, and these little upgrades take it from basic to something worth talking about.
My top tip is to let the batter rest. It helps hydrate the mix so your muffins bake up taller. Also, when removing the muffins from the pan, twist gently, then lift (see the recipe video).
