This high-protein cottage cheese pizza has a crisp, golden brown crust made from a blend of cottage cheese, eggs, and flour. It’s a thin-crust pizza with a softer bite than traditional dough, but it still bakes up firm enough to hold your favorite toppings without being too floppy.

If you’ve seen the viral cottage cheese flatbread on TikTok, this thin crust pizza recipe takes that idea and turns it into a pizza night staple. The crust is simple to prep, and you can use your favorite pizza toppings. All you need is a baking sheet, parchment paper, and about 45 minutes from start to finish.

Recipe Highlights
- Higher protein crust: The cottage cheese and egg mixture forms a cheesy high protein pizza dough (an estimated 32 grams of protein in half of the pizza).
- Simple ingredients: Uses pantry staples like all-purpose flour, eggs, and pizza sauce.
- No blender needed: You can mix the crust by hand, no special equipment required.

Ingredients

- Cottage cheese: Use your favorite brand, full fat or low fat. I recommend a 4% milkfat cottage cheese that is thick and creamy, and not watery.
- Egg: Helps bind the crust ingredients together.
- Egg whites: Adds structure and extra protein without additional fat.
- All-purpose flour: Gives the crust just enough body and chew.
- Seasoning: Italian seasoning and garlic powder have that classic pizza herb flavor.
- Pizza sauce: Choose your favorite brand or homemade for the topping.
- Mozzarella cheese: Shredded mozzarella melts beautifully over the toppings.
- Turkey pepperoni: A leaner option.
See the recipe card for quantities.
Instructions
Preheat oven to 325°F (165°C).

Line a baking sheet or pizza pan with parchment paper and spray with cooking spray.

In a medium mixing bowl, mix the cottage cheese, egg, egg whites, flour, Italian seasoning, and garlic powder until well combined.

Pour the cottage cheese mixture onto the parchment and spread into a 10-inch circle. (9 inches if using a low fat cottage cheese or a brand with a thinner consistency)

Bake for 30 minutes, then carefully flip the crust using a large spatula (This helps release some of the moisture). Return to the oven and bake for another 10 minutes.

Let the crust cool for 5 minutes on the pan before topping. This helps it firm up and crisp.

Spread pizza sauce over the cooled crust. Top with mozzarella and pepperoni. Bake for 5 minutes, or until the cheese is melted.

Slice and serve.
Substitutions
- Cottage cheese: I tested this recipe with both low-fat and whole milk cottage cheese. Both worked well! The lower fat version was thinner, so I recommend making the crust slightly smaller (about 9 inches) but sticking to the recipe otherwise.
- Egg and egg whites: Use two whole eggs if you don’t want to separate. It may take on more of an eggy omelette taste.
- All-purpose flour: Substitute with self-rising flour or almond flour.
Equipment
You will need a large baking sheet lined with parchment paper and greased with cooking spray. You will also need a medium mixing bowl for combining the crust ingredients.
Behind the Recipe
This high protein cottage cheese pizza was inspired by the viral cottage cheese flatbread, and it’s become a favorite in our house. It’s easy, high-protein, and satisfies that pizza craving without feeling heavy.
Two of my top tips are to flip the crust mid-bake and let it cool slightly before adding toppings (as instructed in the recipe). Both steps help it crisp up and release extra moisture.

FAQ
Yes, but spread the crust a little less thin.
Flipping helps both sides brown and firm up. If skipped, the bottom may stay soft.
