    Strawberry 7UP Cupcakes

    Like many things, this Diet 7UP Strawberry Cupcakes recipe started with a dead-end pin. Normally, I am really good about clicking on pins to make sure the link checks out because there's nothing worse than going back to your pin board for a recipe only to find out that it leads to nowhere. Unfortunately, that happened to me today!

    7UP Strawberry Cupcakes

    It turns out this cupcakes recipe originated from the Weight Watchers forums (allegedly) and is now popping up all over Pinterest. I found recipes on Spark, Addicted2Recipes and Thinkarete all with identical recipes. I put it to the test, and it works!

    They are small cupcakes but still very fluffy. They aren't as rich as a normal cupcake, but it's a sweet little bite, the perfect guilt-free dessert.

    I put the recipe in to the My Fitness Pal app, and each cupcakes (without frosting) comes to about 70 calories a piece. With my Vanilla Cool Whip Frosting it comes to about 110 calories.

    7UP Strawberry Cupcakes

    Look at the cute Wilton zebra stripe cupcake liners I found at Safeway! Normally I have to run to Michael's to get cute cupcake papers.

    You just mix the Diet 7UP with your cake mix. Any flavor will do, but according to the recipe I found on Spark, Angel Food Cake mix will not work. I have no idea why that would be, but I'll take her word! She also says any diet soda will do.

    Divide the mixture among 24 cupcakes, filling the liners about halfway. You can fill them more, about ¾ of the way, but of course it will make less cupcakes.

    Pop in the oven at 350 for 20 minutes.

    Let them cool before frosting. To keep these light, I recommend my Vanilla Cool Whip Frosting.

    Diet 7UP Strawberry Cupcakes

    Ingredients
      

    • 1 box strawberry cake mix
    • 12 oz Diet 7UP

    Instructions
     

    • Preheat oven to 350.
    • Mix cake mix and diet 7 cup, getting rid of as many lumps as possible.
    • Divide into cupcake pan, splitting into 24 cupcake liners.
    • Bake for 20 minutes. Let cool before frosting.
