    Ingredients

    Velveeta Sausage Cheese Dip ingredients
    • Hot Pork Sausage Roll: This is a raw seasoned and spiced ground breakfast sausage made from ground pork that comes in a chub/roll. Spicy sausage is great, but you can also use mild sausage for less heat.
    • Velveeta Original Cheese: Velveeta is a processed cheese product that comes in a block (or sometimes called a loaf). It has a smooth and creamy texture, great for melting.
    • Rotel Original: Rotel tomatoes are canned diced tomatoes mixed with green chilies. For a spicy dip, try the Hot variety. Do not drain the liquid.

See the recipe card for quantities.

    Instructions

    Browned pork sausage

In a large skillet, brown the pork sausage over medium heat, breaking it up into small pieces with the spatula as it cooks. Drain the excess grease.

Browned pork sausage, cubed Velveeta cheese, and Rotel diced tomatoes added to a large skillet

Return the skillet to the heat and add the cubed Velveeta and the can of Rotel (with the liquid).

Velveeta Sausage Cheese Dip melted in a large skillet and stirred to be fully combined

Stir occasionally until the cheese is fully melted. If desired, reduce the heat to low or warm to prevent the cheese from hardening.

Serve with tortilla chips and raw veggies like red bell peppers and carrot sticks.

See the recipe card below for slow cooker and microwave instructions.

    Top Tips

    • An easy way to drain the excess grease is to use paper towels to absorb the fat.
    • If possible, keep the dip warm when serving to prevent the cheese from hardening.

    Substitutions

    • Hot pork sausage: Ground beef, ground pork, mild pork sausage, sweet pork sausage, spicy Italian sausage, and more. Ground beef and pork will not have the same flavor impact, so you may want to experiment with adding crushed red pepper or hot sauce.
    • Velveeta: This recipe calls for Velveeta Original, but you can also use other varieties like sharp cheddar, queso blanco, 2% milk, or Mexican. Another great option is your local store brand's prepared cheese product. You can also do a 50/50 mix of Velveeta and cheddar cheese or Velveeta and cream cheese (or follow a cream cheese dip recipe).
    • Rotel: Mix diced tomatoes and green chiles to make a simple homemade Rotel substitute.

    Equipment

    • Large skillet - To brown the breakfast sausage.
    • Spatula - To cook the sausage and break up the meat into small pieces.
    • Cooking spoon - To stir the dip as the cheese melts.
    • Slow cooker (optional) - If following the Crockpot method.

    Storage

To store leftover Rotel sausage dip, let it cool, then transfer it to an airtight container and refrigerate. Use within 3-4 days. Reheat gently on the stovetop or in the microwave, stirring occasionally.

    FAQ

How long is Velveeta dip good for?

Velveeta dip is good for three to four days when stored properly in the refrigerator in an airtight container.

How do you keep Velveeta dip from getting hard?

Keep the dip warm and stir occasionally to break up the film that is created as the dip cools.
