Mix-in Ideas
- Chocolate chips
- Oreo cookies
- Protein cookies or keto cookies
- Small frozen berries
Instructions
In a mixing bowl, add the protein shake, stevia, and pudding mix. Whisk until the stevia is dissolved and there are no lumps. The pudding mix will not fully dissolve.
Allow the bubbles to settle (less than 1 minute) before pouring the mixture into a Creami pint.
Pour the mixture into a clean Creami pint. Cover it with a lid and freeze on a level surface for a minimum of 12 hours.
After freezing, remove the frozen pint from the freezer and remove the lid.
Put the opened pint into the outer bowl of the Ninja Creami machine, install the Creamerizer Paddle to the lid, and lock the lid assembly to the bowl. Slide the bowl assembly into the machine's motor base, twist it to the right to lock it into place, and select the Lite Ice Cream button.
After processing is complete, unlock and remove the bowl assembly from the ice cream maker and remove the outer bowl lid. The first spin will likely appear icy since this is a lite ice cream recipe.
Re-spin if needed until you reach a creamy consistency.
Serve immediately. The texture is much closer to soft serve (or a frosty) than hard-scoop traditional ice cream, but you can still get some soft scoops.
Optional: If adding mix-ins, create a small tunnel with a spoon in the center of the ice cream to the bottom of the pint. Add the mix-ins, reassemble the bowl, and process using the Mix-In program.
Substitutions
Protein shake: This Ninja Creami vanilla protein ice cream recipe without protein powder is incredibly easy with a pre-made shake. You can use your favorite protein shake such as the smaller vanilla Fairlife Nutrition Plan shake or a Premier Protein shake.
Protein powder: If you want to create a similar lite ice cream using protein powder and milk instead of a protein shake, use 12-14 ounces of milk (almond milk, fat free Fairlife, etc.) and a scoop of vanilla protein powder. You may also wish to add a small splash of vanilla extract to boost the flavor.
Sweetener: Try Stevia, Splenda, Swerve, and monk fruit with erythritol.
Pudding mix: Alternative to sugar-free pudding mix include regular pudding mix and a tablespoon of cream cheese (though these will change the macros. You can also use ½ teaspoon of guar gum.
Variations
Chocolate: For chocolate protein ice cream, use the Fairlife Core Power Chocolate Protein Shake (or similar). You can also try my Ninja Creami lite chocolate ice cream recipe.
Full-fat: For a traditional ice cream that's high-fat and fully sweet, try classic Ninja Creami vanilla ice cream.
Cookies and cream: Try my Ninja Creami Oreo protein ice cream recipe.
Raspberry white chocolate: Swap the vanilla pudding with sugar free white chocolate pudding mix, and for your mix-in add ¼ cup frozen raspberries.
Cheesecake: Swap the vanilla pudding with sugar free cheesecake pudding mix and add in graham crackers for your mix-in.
Equipment
Storage
Use a spoon to flatten the top of the ice cream and cover it with the storage lid before refreezing. The ice cream will harden as it re-freezes, so you will need to process it again on the lite ice cream setting.
Pro Tips
- Upright freezer - Chest freezers can get too cold for your creami creations. If your pint is too cold, you may get an ice wall inside the pint that doesn't fully process and incorporate in your mixture, especially with lite ice cream.
- Freeze on a flat surface - Processing pints frozen at an angle could damage the machine or blade.
- Mix fill - Only fill your pint to the Max Fill line. You can exceed the max fill line when adding mix-ins (after the ice cream is already processed).
See your Ninja Creami user manual and safety instructions prior to use.
FAQ
Yes. It helps to add a stabilizer such as sugar free instant pudding mix to get a creamy texture instead of an icy texture as well as a little artificial sweetener for a more indulgent flavor.
It takes 12 to 24 hours to freeze the ice cream (depending on the recipe) and then 2-4 minutes to process in the motor base, depending on the function selected. Lite ice cream takes longer than traditional ice cream.

Lynn says
I do not understand how you got 14 carbs for a pint of ice cream. Can you post how you came to this?
Thanks!
Kelsey Smith says
Hi Lynn, a Fairlife Core Power Vanilla Protein Shake has 7 grams of carbohydrates, sugar free instant vanilla pudding mix varies by brand but Jell-O brand has 5 grams for a tablespoon, and stevia sweetener blends vary by brand but Stevia in the Raw is less than 0.5 gram per tsp (3 tsp in a tbsp). Is this far off from your calculations? If so, let me know and I'll look deeper into it! Thanks. All of my nutrition is calculated through the Spoonacular API.
Patti says
The top of the post says 35 oz. of protein shake. The recipe says 14 or 21 oz.
Also, why do you double the Stevia/sweetener and pudding for the deluxe pint, when the protein shake is only 1-1/2 times as much as the standard pint?
Kelsey Smith says
Hi Patti, I searched the page but I don't see where 35 is mentioned. Use 14 ounces for a standard pint or 21 for a deluxe pint. I've updated the recipe card to correct the Stevia and pudding, thank you for pointing that out.
Patti says
If using Monk Fruit Sweetener, how much to use?
Kelsey Smith says
Hi Patti, You will have to experiment with the monk fruit. I've read it is not as sweet as Stevia. I found a Ninja official recipe that uses 5 tablespoons of Monk Fruit in a standard pint recipe.
